Happy Father's Day!

My earliest childhood memory is of waking up to the fresh smell of filter coffee wafting through the house. There is no gentler alarm than a cup of filter coffee!


Strange to be writing about coffee in a chai blog but this post is an ode to my dad's filter coffee. He is a filter coffee guy... period and he makes the best filter coffee that I have ever tasted!

Each cup is a production, that starts with boiling the perfect amount of water, adding it to the filter with the coffee powder, waiting for the decoction (thick mixture of coffee and water) to drip and then adding it to the milk which is boiled to the right temperature. There are pre and post steps like aerating the decoction first, then the milk and finally the mixture of milk and decoction! Seeing coffee being made is a visual treat in itself. I find the procedure quite complicated but my dad makes it look easy!

I have tried to learn over the years but to no avail! He eyeballs everything and there are no set times, temperatures, measurements or steps that you can meticulously follow! Just when you think you got the hang of it he goes and changes some variable and you are lost again. What hasn't changed over the years though, is the incredible taste, his patience in making that first cup of morning coffee or his love in sharing it with his family!

Happy Father's Day Appa! Someday I hope to master filter coffee! Maybe Kettle Chai will then be called Kettle Chai & Coffee ;)
