We debuted our new chai at the farmer's market these week.....plain chai!.... sounds simple? Trust us .....its the simple things which are tough to master! Our new chai is very close in taste to Hyderabadi Irani chai but the only reason we don't call it that is that it is not pressure cooked like Irani Chai.
Anyone who knows about chais of India is sure to have heard of this wonder from Hyderabad. It is made by pressure cooking black tea for a very long time and adding it to milk which has also been simmered till the milk solids in the milk are visible. It is a labor of love and a small cup goes a long way since its pretty heavy on the palate.
Our chai is close in taste but is not that heavy and nor does it have any spices!. The chai was a big hit with people who don't do well with spices or people who are used to milky teas (taiwanese, japanese milky teas...etc).
