Brewing a cup of Chai is almost a zen experience. You wait for the water and milk to boil to the right temperature, add the spices, the sugar, the tea and then wait for the magic to happen. As you wait you look around, you appreciate the sunshine outside, the plants growing in your bay window and the general sense of calm that waiting brings. The amber liquid bubbles up and the Chai smell permeates the kitchen. Ah it's ready! All that is left to do is strain it, sip it slowly and go back to whatever you were doing with a fresh perspective!
To paraphrase a very infamous Indian ad...pleasure doesn't come in an instant!
